Carbohydrates: Making Healthy Choices

Carbohydrates come in two basic types: simple and complex. Most of our carbohydrates should come from complex carbohydrates, providing energy, fiber, and essential vitamins and minerals. Starch and fiber are the primary ingredients of complex carbohydrates. Simple carbs are generally those found in foods containing sugars and in some fruits, vegetables, and their juices. With the exception of fruits and vegetables, foods high in simple carbohydrates provide less nutritional value.
